Moroccan mint tea (atai) is a cultural staple in North Africa and the Middle East. Traditionally, it's made with Chinese gunpowder green tea, fresh mint, and lots of sugar, served in small glasses poured from height to create foam.
This loose leaf version combines gunpowder green tea with dried spearmint and peppermint. The gunpowder green tea gets its name from the rolled, pellet-like leaves that resemble old gunpowder. It has a bold, earthy character that stands up to mint. Spearmint provides sweet mint flavor. Peppermint adds cooling menthol.
In Morocco, this tea is served multiple times a day, especially after meals to aid digestion. It's a ritual of hospitality. Refusing tea is considered rude. The tea is that important.

Pro tip: First steep is traditionally discarded (to "wake" the tea). Second steep is the main brew.

Why gunpowder green tea? The rolled pellet shape unfurls when steeped, releasing flavor gradually. It's more robust than other green teas, with an earthy, slightly smoky character. This boldness is necessary to balance the strong mint flavor. Delicate green teas would disappear under all that mint.
Spearmint vs peppermint: Spearmint (Mentha spicata) is sweeter and milder. Peppermint (Mentha piperita) is more intense with higher menthol content, creating that cooling sensation. This blend uses both for balanced mint flavor: sweet from spearmint, cooling from peppermint.
Traditional serving: In Morocco, mint tea is poured from height (2-3 feet above the glass) to create foam and aerate the tea. It's often very sweet (lots of sugar) and served in small glasses.
