Bold, smoky, intense. Dark chocolate and roasted nuts up front—the kind of flavors you only get from extreme roasting. Subtle smoke that's present but not overwhelming. Bittersweet finish that's more interesting than harsh. The body is full, heavy, almost syrupy. The acidity is basically gone (roasted away completely). This is coffee that feels substantial.

Italian roast is a style, not a place. It's how traditional Italian espresso bars roasted beans—dark enough to create that thick, syrupy, intensely "coffee" experience that became synonymous with Italian café culture.

This version adds a touch of specialty-grade robusta to the arabica base, which is actually traditional in Italy (despite what coffee snobs tell you). The robusta adds body, crema (that thick foam on espresso), and earthy depth without tasting like burnt tires.

Roasted to 455-460°F, which is about as far as you can push beans before they literally carbonize. At this extreme roast level, origin characteristics don't matter much—everything tastes like roast character. What does matter: bean quality (cheap beans roasted this dark taste like ashtrays) and precise roast control (30 seconds too long and it's actually burnt).

The arabica provides baseline quality and sweetness. The robusta adds caffeine, crema production, and the earthy body that traditional Italian espresso is known for. Together: extreme coffee done correctly.

Italian roast vs French roast—what's the difference? About 5-10°F and personal preference. French roast = 450-455°F. Italian roast = 455-460°F. Italian is slightly darker, slightly more smoky. Both are very dark roasts where origin characteristics disappear. The names are more marketing than meaningful distinctions. In Italy, espresso is just called espresso. "Italian roast" is an American term.

Why add robusta to Italian roast? Tradition and function. Traditional Italian espresso bars use arabica/robusta blends (often 80/20 or 75/25). Robusta adds: (1) More caffeine (robusta has 2x the caffeine of arabica), (2) Thicker crema (robusta produces more foam), (3) Earthy body that balances arabica's remaining sweetness. Specialty coffee people hate robusta because most robusta is terrible. But specialty-grade robusta from India or Vietnam is different—it adds complexity instead of harshness.

Is this just burnt coffee? Bad Italian roast, yes. Good Italian roast, no. The difference: (1) Starting with quality beans that can handle extreme heat, (2) Precise temperature control so you hit 455-460°F without going further, (3) Knowing exactly when to drop the beans to stop roasting. Thirty seconds too long and it's literally burnt. Done correctly, it's bold, chocolatey, smoky without being harsh. It's extreme roasting executed skillfully.
