Classic dark roast done right. Dark chocolate up front—the kind that's 70%+ cacao. Caramelized sugar adds sweetness without brightness. Toasted nuts and subtle smoke on the finish. The body is full and heavy—you can feel it in your mouth. The acidity is almost gone (dark roasting burns it away). The finish is bittersweet but pleasant, not harsh.

French roast isn't from France—it's a roast level named after traditional French café style. The idea: roast beans dark enough that you taste roast character more than origin character.

For a long time, specialty coffee people dismissed dark roasts as burnt mistakes. And yeah, bad dark roasts are burnt. But there's skill in roasting dark without destroying everything. This uses quality Central American beans (probably Colombian and Guatemalan, maybe some Brazilian) and pushes them to 450-455°F—right at the edge of second crack where oils migrate to the surface and sugars caramelize deeply.

At this temperature, origin characteristics largely disappear. Ethiopian coffee roasted this dark won't taste Ethiopian anymore. What you get instead is roast-driven flavors: caramelization, Maillard reactions, pyrolysis (controlled burning that creates smoky notes).

The challenge: roast dark enough to get boldness and body, but not so dark it tastes like charcoal. It requires precise temperature control and knowing exactly when to drop the beans. This gets it right. It's bold, dark, smoky—but not harsh.

French roast vs Italian roast vs Espresso roast—what's the difference? They're all just roast levels. French roast = 450-455°F (dark, oily, smoky). Italian roast = 455-460°F (darker, more smoke). Espresso roast = usually 445-455°F (can be slightly lighter than French). None of these indicate quality or origin—just how dark the beans are roasted. You can make espresso with any roast level. The names are marketing more than meaningful distinctions.

Why does dark roast have less caffeine? Caffeine is somewhat volatile. During roasting, especially long dark roasts, some caffeine burns off. The difference is small (maybe 10-15mg per cup compared to light roast), but dark roasts technically have slightly less caffeine by weight. The "strong" perception from dark roasts comes from bold, bitter flavors, not actual caffeine content.

Is French roast just burnt coffee? Bad French roast, yes. Good French roast, no. The difference: precise temperature control, knowing when to drop the beans, and starting with quality beans that can handle high heat. Cheap beans roasted too dark taste like ashtrays. Quality beans roasted carefully to 450-455°F taste bold, chocolatey, and slightly smoky without being harsh or burnt. It's a skill.
