Wild idea: what if we roasted the same bean two different ways, then blended them?

That's Cowboy Blend. Part medium roast for brightness, fruit, and origin character. Part dark roast for body, boldness, and classic "coffee" flavor. The result is bigger and more interesting than either roast level alone.

The medium roast component (probably 410-420°F, just past first crack) preserves origin acidity, fruit notes, and complexity. The dark roast (440-450°F, well into second crack) adds body, reduces acidity, and develops chocolate and caramel through Maillard reactions.

Blend ratio is probably 50/50 or 60/40 medium to dark. The beans themselves likely come from Central and South America—Colombian for balance, Brazilian for chocolate, maybe Guatemalan for brightness. They're chosen specifically for their ability to taste good at multiple roast levels.

The name comes from camp coffee traditions where you'd throw whatever was available into the pot over the fire. Except this is intentional and actually tastes good. Western vibes, specialty execution.

Blending roast levels—is that allowed? Specialty coffee purists would say no. Traditionally, you roast beans to one level based on their origin characteristics. Blending roast levels is uncommon because it's harder to execute consistently. But when done intentionally, it works. You get complexity and contrast: brightness + body, fruit + chocolate, acidity + smoothness. The result is coffee that's more dynamic than single-roast blends.

Why is it called Cowboy Blend? Cowboy coffee is a brewing method: grounds in a pot, boiling water, steep, settle, pour. It's rustic, variable, adaptable. The name suggests coffee that works under imperfect conditions. But the actual blend is precise and intentional—nothing rustic about the roasting process. The irony is part of the appeal.

Does the medium roast get over-extracted? No, because medium and dark roasts extract at similar rates when ground and brewed together. The concern would be if one roast level extracted faster, creating imbalance. But both are roasted past first crack (medium = just past, dark = well past), so their cellular structure and density are similar enough that extraction timing aligns. The flavor difference comes from roast development, not extraction rate.
