Costa Rican honey-processed beans bring that signature honey sweetness. Honey processing leaves some of the fruit mucilage on the bean during drying, which creates sticky-sweet flavors and syrupy body. The Tarrazú and Central Valley regions are known for balanced, approachable coffees that work well lighter roasted.

Ethiopian beans add brightness and florals. Washed processing keeps the flavors clean and articulate. Together they create sweetness + complexity without needing dark roast development.

Roasted to blonde/cinnamon levels (385-400°F, just past first crack). This preserves origin acidity, fruit notes, and delicate sweetness while developing enough sugars to work as espresso. It's technically challenging—most espresso relies on dark roast boldness. This relies on precision.

Can light roast espresso actually work? Yes, but it's technically harder than dark roast espresso. The challenge: extract enough to develop sweetness and body without going sour or thin. Light roasts have more acidity and less developed sugars, so they're easier to under-extract (sour, weak) or over-extract (bitter, astringent). When dialed in correctly—grind size, temperature, pressure, time—light roast espresso has clarity and sweetness dark roasts can't match.

What's honey processing? Honey processing is a hybrid between washed and natural. After depulping (removing the outer fruit skin), some of the sticky fruit mucilage (the "honey") stays on the bean during drying. How much mucilage remains determines the category: white honey (least), yellow, red, black (most). This creates sweetness and body without the fermented funk of full natural processing. Costa Rica is famous for it.

Light roast caffeine myth: Dark roasts are perceived as stronger, so people assume they have more caffeine. Actually, roasting burns off caffeine. Light roasts preserve more. The difference is small (maybe 10-15mg per cup), but light roasts technically have slightly more caffeine by weight. The "strong" perception from dark roasts comes from bolder, more bitter flavors, not actual caffeine content.
